Baked Cheesy Butternut Squash Spirals


  • 1 package Cece Veggie Co’s Organic Butternut Squash Spirals
  • 1 tbsp unsalted butter, melted
  • 1 tbsp extra virgin olive oil
  • 3⁄4 cup sharp cheddar cheese
  • 1⁄3 cup Parmesan cheese
  • 1 cup fresh spinach
  • 1 small purple onion, chopped
  • 1 small garlic clove, minced
  • 1⁄2 tsp fresh thyme, chopped
  • 1 tsp fresh rosemary, chopped
  • Salt and pepper to taste


  1. Preheat oven to 350F.
  2. Combine the olive oil and butter together.
  3. Toss in butternut squash spirals, spinach, onions, garlic clove, thyme, rosemary, salt and pepper together.
  4. In a casserole pan, add in half of the butternut squash spirals. Top with parmesan cheese. Add remaining butternut squash spirals. Top casserole dish with all the cheddar cheese.
  5. Bake for 22-25 minutes until squash is soft.
  6. Remove from oven and let cool. Top with more cheddar, thyme and rosemary if desired.Enjoy!
