1 pack of Cece’s® Veggie Co. Organic White Sweet Potato Spirals
2 tbsp Vital Farms Pasture-Raised Grass Fed Butter
¼ onion, diced
½ lb Brussels sprouts, thinly sliced
¼ lb breakfast sausage
1 apple, chopped
2 tbsp fresh sage, stems removed, chopped
2 handfuls baby spinach
- Using a large skillet, cook breakfast sausage until cooked through. Set aside.
- Heat butter over medium high heat until melted. Add onion and Brussels sprouts and sauté until softened, 5-6 minutes.
- Add white sweet potato spirals, apple, and sage, and continue to cook, stirring often to combine the mixture, for 4-6 minutes until spirals are al dente.
- Stir in cooked sausage and continue to heat until warmed. Add spinach and toss mixture together until wilted, about 1 minute.
