Cashew Riced Broccoli with Garlic Lemon Butter


1 pack of Cece’s® Veggie Co. Riced Organic Broccoli
1/3 cup dairy or vegan butter
1 Tbsp brown sugar (sub with coconut sugar if paleo)
3 Tbsp soy sauce (use tamari if gluten free)
2 tsp white vinegar
2 garlic cloves, minced
Juice of 1 lemon + 1 lemon wedge
1/3 cup chopped salted cashews
1/4 cup green onions, thinly sliced (for garnish)

How To:

  1. Melt butter in large skillet at medium heat, then mix in brown sugar, soy sauce, vinegar, garlic and lemon juice. 
  2. When sugar has dissolved, add Cece’s organic riced broccoli and sauté for 6-8 minutes.
  3. Once riced broccoli has reached desired softness, mix in cashews. Add salt and pepper to taste.
  4. Garnish with lemon wedge and green onions and enjoy!
