1 package Cece Veggie Co’s Organic Cauliflower Rice
3/4 cup Mother Raw’s Mediterranean Dressing
1 small onion, chopped
1 cup canned chickpeas, shells removed
1⁄2 cup cherry tomatoes, sliced in half
1/4 tsp salt
1 tbsp extra virgin olive oil
1 small lemon, sliced
1 tbsp rosemary, chopped
- Heat a pan with 1 tbsp olive oil over medium heat.
- Once the pan is hot, add in onions. Stir until fragrant.
- Add in cauliflower rice and salt. Let cook for 6 minutes until soft, stirring occasionally.
- Add in chickpeas and tomatoes, and let it cook for 2-3 minutes.
- Add dressing into pan and combine thoroughly. Let it sit in pan for 1-2 minutes.
- Remove from heat. Add more dressing if desired at this point. Top with sliced lemons and rosemary. Enjoy!
