CREAMY BUTTERNUT SQUASH SOUP

Ingredients:

1 package Cece’s Veggie Co. Organic Cubed Butternut Squash
7 cups chicken or veggie broth
1 red bell pepper, chopped
1 onion, chopped
1/2 cup heavy cream
ground nutmeg, pumpkin seeds, crème fraîche (as garnish)

How To:

  1. In a large pot, combine Cece’s Veggie Co. Organic Cubed Butternut Squash with broth, bell pepper and onion. Bring to a boil, then cover & simmer for 30-35 minutes, until butternut is tender and easy to break apart with a spoon.
  2. Use an immersion blender to purée until smooth. Stir in cream and bring to a simmer. Add salt & pepper to taste.
  3. To serve, divide into bowls and garnish with a dollop of crème fraîche and a sprinkle of nutmeg and pumpkin seeds. Enjoy!
