1 pack of Cece’s® Veggie Co. Noodled Organic Sweet Potato
4 Tbsp extra virgin olive oil
3 garlic cloves, thinly sliced
1 pint cherry tomatoes, halved
1 bunch whole fresh basil leaves, stems removed
6 oz fresh mozzarella, sliced
fresh ground pepper
- Heat skillet with olive oil over low heat. Add garlic and cook until fragrant, about 1-2 minute.
- Remove garlic from skillet and set aside. Add Cece’s organic sweet potato noodles and sauté until al dente, about 4-6 minutes.
- In a large serving bowl, combine cooked sweet potato spirals with tomatoes, mozzarella and basil.
- Drizzle on the infused garlic oil while tossing all ingredients to evenly coat.
- Add fresh ground pepper and salt to taste and enjoy!
