GARLIC MOZZARELLA SWEET POTATO NOODLES

Ingredients:

1 pack of Cece’s® Veggie Co. Noodled Organic Sweet Potato
4 Tbsp extra virgin olive oil
3 garlic cloves, thinly sliced
1 pint cherry tomatoes, halved
1 bunch whole fresh basil leaves, stems removed
6 oz fresh mozzarella, sliced
fresh ground pepper

How To:

  1. Heat skillet with olive oil over low heat. Add garlic and cook until fragrant, about 1-2 minute.
  2. Remove garlic from skillet and set aside. Add Cece’s organic sweet potato noodles and sauté until al dente, about 4-6 minutes.
  3. In a large serving bowl, combine cooked sweet potato spirals with tomatoes, mozzarella and basil.
  4. Drizzle on the infused garlic oil while tossing all ingredients to evenly coat.
  5. Add fresh ground pepper and salt to taste and enjoy!
