1 package Cece’s Veggie Co. Organic Cubed Butternut Squash
2 Tbsp olive oil
salt & pepper to taste
2 Tbsp butter
4 garlic cloves, minced
1 tsp paprika
1 bunch fresh basil, thinly sliced
- Preheat oven to 425 degrees. Place Cece’s Veggie Co. Organic Cubed Butternut Squash on a sheet pan in a single layer and add olive oil, salt, and pepper, tossing to coat evenly.
- Roast until tender, turning halfway through, about 30-40 minutes.
- Meanwhile, heat butter in a small saucepan over low heat. Add garlic and cook, stirring constantly, 4-5 minutes.
- Stir in paprika, salt, and pepper and heat until sizzling, about 30 seconds.
- Drizzle over roasted butternut squash and toss gently to coat. Garnish with fresh basil to serve, and enjoy!
