1 package Cece’s Veggie Co. Organic Cubed Butternut Squash
2 Tbsp olive oil
salt & pepper to taste
2 Tbsp butter
4 garlic cloves, minced
1 tsp paprika
1 bunch fresh basil, thinly sliced

How To:

  1. Preheat oven to 425 degrees. Place Cece’s Veggie Co. Organic Cubed Butternut Squash on a sheet pan in a single layer and add olive oil, salt, and pepper, tossing to coat evenly.
  2. Roast until tender, turning halfway through, about 30-40 minutes.
  3. Meanwhile, heat butter in a small saucepan over low heat. Add garlic and cook, stirring constantly, 4-5 minutes.
  4. Stir in paprika, salt, and pepper and heat until sizzling, about 30 seconds.
  5. Drizzle over roasted butternut squash and toss gently to coat. Garnish with fresh basil to serve, and enjoy!
