Goan Coconut Chicken with Riced Veggie Medley

Cece's Veggie Co recipes with coconut chicken with organic riced cauliflower

Ingredients:

1 package of Cece’s Veggie Co. Organic Veggie Medley
1 package of organic chicken tenders (cut into nuggets)
1/2 jar of Goan Coconut Maya Kaimal Indian Simmer Sauce
1 tbsp olive oil
Cilantro for garnish
Fresh spinach

How To:

  1. Cook Cece’s Veggie Co. according to package in a pan with 1 tbsp olive oil.
  2. Sauté chicken on stove until cooked through. Add in Maya Kaimal and continue heating, stirring to combine, on low heat for 3-4 minutes
  3. Layer in bowl by adding in fresh spinach, cooked Cece’s Veggie Co. Organic Veggie Medley, then topping with chicken. 
  4. Garnish with cilantro and enjoy!
