GRAIN FREE STUFFING

Ingredients:

  • 1 package Cece Veggie Co’s Rice Veggie Medley
  • 2 tbsp extra virgin olive oil
  • 1 medium red onion, diced
  • 2 stalks celery, diced
  • 2 cups mushrooms, thinly sliced
  • ¼ cup unsalted/low sodium vegetable broth
  • ¼ cup red pepper, diced
  • 1 tsp garlic powder
  • ½ tsp salt
  • ½ tsp pepper
  • Handful of chopped parsley

Directions:

  1. Heat a pan with the olive oil over medium heat. Add in onions and let cook until fragrant.
  2. Add the remaining ingredients together except the parsley. Look cook for 5-6 minutes until the veggie rice is soft.
  3. Pour into a bowl. Top with parsley. Enjoy!
