- 1 package Cece Veggie Co’s Rice Veggie Medley
- 2 tbsp extra virgin olive oil
- 1 medium red onion, diced
- 2 stalks celery, diced
- 2 cups mushrooms, thinly sliced
- ¼ cup unsalted/low sodium vegetable broth
- ¼ cup red pepper, diced
- 1 tsp garlic powder
- ½ tsp salt
- ½ tsp pepper
- Handful of chopped parsley
- Heat a pan with the olive oil over medium heat. Add in onions and let cook until fragrant.
- Add the remaining ingredients together except the parsley. Look cook for 5-6 minutes until the veggie rice is soft.
- Pour into a bowl. Top with parsley. Enjoy!
