Mashed Cauliflower is a delicious and lightened-up twist on the classic mashed potatoes. This recipe is vegan, keto-friendly, and low-carb making it a great alternative for holiday side dishes that everyone can enjoy!
- In a medium pot, add in cauliflower rice and 1⁄2 cup vegetable broth. Bring to a boil and reduce heat to medium. Allow it to continue to simmer until the cauliflower rice is soft. If more broth is needed, slowly add in 1 tbsp of the remaining 1⁄4 cup of vegetable broth at a time.
- Once it is soft, transfer to a blender. Add in remaining ingredients and blender until smooth. Add more cream cheese if you want a creamier taste.
- Top with parsley and a drizzle of extra virgin olive oil if desired. Enjoy!
