Healthy Mashed Cauliflower


1 package Cece Veggie Co’s Organic Cauliflower Rice
2-3 garlic cloves, minced
3⁄4 cup vegetable broth
2 tbsp vegan butter
3 tbsp Follow Your Heart Original Cream Cheese
Salt and Pepper to taste
Optional: fresh parsley


  1. In a medium pot, add in cauliflower rice and 1⁄2 cup vegetable broth. Bring to a boil and reduce heat to medium. Allow it to continue to simmer until the cauliflower rice is soft. If more broth is needed, slowly add in 1 tbsp of the remaining 1⁄4 cup of vegetable broth at a time.
  2. Once it is soft, transfer to a blender. Add in remaining ingredients and blender until smooth. Add more cream cheese if you want a creamier taste.
  3. Top with parsley and a drizzle of extra virgin olive oil if desired. Enjoy!
