INGREDIENTS:
32 oz chicken or vegetable broth
1/4 c 1/4” cubed celery
1/4 c 1/4” cubed onion
1/4 c 1/4” cubed carrots
2 tbsp olive oil
fresh thyme
1 c cooked quinoa
water (if needed)
In a large saucepan heat olive oil, add onion, celery, and carrots, cook until onions are translucent and carrots are soft, add garlic and remaining olive oil, season with salt and pepper. Add broth, bring to boil and lower to simmer for 8-10 minutes. Add Cece’s® Veggie Co. Butternut Spirals, thyme leaves, and quinoa– adding water if the soup is too thick, season to taste. Heat through, serve and enjoy!
