KALE & ITALIAN SAUSAGE WITH BUTTERNUT VEGGICCINE NOODLES

Ingredients:

1 pack of Cece’s® Veggie Co. Noodled Organic Butternut Veggiccine®
3 Italian sausage links (1/2 lb), casings removed
1 Tbsp olive oil
2 large garlic cloves, minced
1 bunch kale, chopped (remove stems before chopping)
1 lemon, cut into wedge
crushed red pepper flakes, to tastes
Parmesan cheese (optional garnish)

How To:

  1. Heat skillet over medium-high heat and add Italian sausage. Use a wooden spoon to break sausage into smaller pieces and stir occasionally until browned and cooked through.
  2. Removed sausage from skillet and set aside. Add olive oil, garlic, red pepper to skillet and sauté until fragrant, about 1 minute.
  3. Add kale and continue sautéing until it starts to soften, 3-4 minutes.
  4. Add Cece’s organic butternut veggiccine noodles and continue to sauté until noodles are al dente and kale is tender, about another 5 minutes.
  5. Stir in cooked sausage and remove from heat. Divide into serving bowls and garnish each with a squeeze of lemon and Parmesan cheese, if desired. Enjoy!
