LEFTOVER TURKEY VEGGIE NOODLE SOUP

Ingredients:

1 pack of Cece’s® Veggie Co. Noodled Organic White Sweet Potato
1 Tbsp cooking oil
Shredded leftover turkey (chicken would work too!)
1 cup carrots, diced
1 cup onion, diced
1 cup celery, diced
1 16oz pack Bare Bones Turkey Broth
Chopped green onions (for garnish)

How To:

  1. Heat oil in a medium pot over medium high heat and sauté carrots, onion, and celery until onion is translucent, about 5-7 minutes.
  2. Pour in turkey broth and Cece’s White Sweet Potato noodles and bring to a simmer until heated through, about 5 minutes.
  3. Turn the heat to low and add shredded turkey. Continue heating on low for 5 more minutes, stirring continuously.
  4. Remove from heat and serve immediately. Garnish with green onions, if desired.
