Maple Bourbon Glazed Sweet Potato Spirals Cranberry Bake

What’s better than a warm maple bourbon dish on Thanksgiving? Well, maybe the turkey, itself! However, for this Thanksgiving, we’re stuffing our faces with this vegan friendly Maple Bourbon Glazed Sweet Potato Spirals Cranberry Bake!

 

These organic spiralized sweet potatoes are the perfect compliment to Cape Cod Select’s fresh Cranberries!

 

Ingredients
– 1 package of Cece’s™ Veggie Co. Sweet Potato Spirals
– 1 tbsp brown sugar
– 2 tbsp tonic water
– 1/3 cup maple syrup
– 2 tbsp soy sauce
– 2 tbsp bourbon (We grabbed a handle of our local favorites over at Treaty Oak)
– 1 tbsp spicy brown mustard (We used our personal favorites, Sir Kensington’s!)

 

Pre-heat oven to 400 degrees. In a sauce pan on medium heat, combine brown sugar, tonic water, bourbon, maple, mustard, and soy sauce. When the brown sugar has dissolved completely, add in Cape Cod Select’s premium farm fresh cranberries and let simmer for two minutes. In a cast iron skillet, place in a package of Cece’s™ Veggie Co. USDA organic sweet potato spirals. Pour the glaze over the spirals and place into the oven for 15 minutes. If desired, top with walnuts and cinnamon for more of a dessert feel! Serve warm and enjoy!
