MAPLE ROASTED BUTTERNUT SQUASH WITH CRANBERRIES AND PECANS

Ingredients:

  • 1 (16 ounce) package Organic Cubed Butternut
  • 2 tbsp brown sugar
  • 1-2 tbsp olive oil (or oil of choice)
  • 1 tsp cinnamon
  • 1/2-1 tsp salt (to taste)
  • 1/3 cup pure maple syrup
  • 3/4 cup fresh cranberries
  • 1 cup pecans, chopped

Directions:

  1. Preheat oven to 400 degrees F. Toss the butternut squash cubes with the brown sugar, cinnamon, olive oil, and salt. Spread evenly in a large baking dish.
  2. Bake for 10 minutes.
  3. After 10 minutes, remove from oven and stir the butternut squash. Sprinkle on the cranberries and the pecans, and drizzle on the maple syrup. Return to the oven and bake for an additional 15-20 minutes, or until squash is fork tender and caramelized.
  4. Stir together before serving. Enjoy!
