1/4 cups balsamic vinegar
2/3 cups plus 1 tbsp olive oil
1/3 c sundried tomatoes
1/4 c julienned basil
1/4 diced red onion
2 diced pepperoncini peppers
1.5 oz crumbled fresh feta
2 tsp dijon mustard

Make the vinaigrette: whisk vinegar, mustard, salt, and pepper to taste in a bowl and gradually whisk in 2/3 cup oil until smooth, set aside. Heat skillet on medium-high heat, add olive oil and sauté Cece’s® Veggie Co. Zucchini Noodles until softened, remove from heat, add tomato, basil, onion, and pepperoncini, toss with vinaigrette and feta, add your favorite protein (optional) and enjoy!
