1 package Cece’s Veggie Co. Organic Riced Cauliflower
2 Tbsp olive oil
1/4 tsp cumin
1 cup red salsa of choice (we recommend a medium-bodied salsa that isn’t too chunky or too thin)
salt & pepper to taste
1/2 bunch cilantro, chopped (as garnish)
- In a large skillet, heat olive over medium-high heat. Add Cece’s Veggie Co. Organic Riced Cauliflower and sauté until starting to soften, 4-5 minutes.
- Add cumin and stir well, tasting for desired spice level.
- Lower heat to medium, add salsa and continue stirring until cauliflower is soft and salsa is heated through. Add salt and pepper to taste.
- Divide into bowls and top with chopped cilantro to serve. Enjoy!
