Mexican-Style Riced Cauliflower

Cece's Veggie Co. Mexican-Style Organic Riced Cauliflower

Ingredients:

1 package Cece’s Veggie Co. Organic Riced Cauliflower
2 Tbsp olive oil
1/4 tsp cumin
1 cup red salsa of choice (we recommend a medium-bodied salsa that isn’t too chunky or too thin)
salt & pepper to taste
1/2 bunch cilantro, chopped (as garnish)

How To:

  1. In a large skillet, heat olive over medium-high heat. Add Cece’s Veggie Co. Organic Riced Cauliflower and sauté until starting to soften, 4-5 minutes.
  2. Add cumin and stir well, tasting for desired spice level.
  3. Lower heat to medium, add salsa and continue stirring until cauliflower is soft and salsa is heated through. Add salt and pepper to taste.
  4. Divide into bowls and top with chopped cilantro to serve. Enjoy!
