1 pack of Cece’s® Veggie Co. Noodled Organic Beets
1/2 cup extra virgin olive oil
2 Tbsp lemon juice
2 Tbsp balsamic vinegar
1/2 cup goat cheese, crumbled
6 cups arugula
1/4 cup pistachios, shelled
1/4 cup mint, julienned
1/4 cup chives, chopped
- In a skillet over medium-high heat, heat 2 Tbsp of the olive oil and sauté Cece’s organic beet spirals until al dente, about 4-6 minutes. Remove from heat and set aside.
- In a separate bowl, whisk lemon juice, balsamic vinegar and remaining olive until combined. Add salt and pepper to taste.
- Pour dressing over beet noodles, stir to coat, and chill for 1 hour.
- Spoon cooled spirals over arugula and top with goat cheese, pistachios, mint and chives. Enjoy!
