1 large avocado
1 small fennel bulb, thinly sliced
1 small red onion, thinly sliced
1/4 cups mint leaves, julienned
juice of 1 lime
1/2 cups extra virgin olive oil
In a medium pan, heat two tablespoons of olive oil. Sauté Cece’s® Veggie Co. Beet Spirals for four minutes, pull from heat and set aside. Whisk lime juice and remaining olive oil, add salt and pepper to taste. Place Beet Spirals in a large bowl and add in avocado, fennel, onion, and mint. Toss with olive oil and lime juice mixture and enjoy!
