1 package of Cece’s Veggie Co. Organic Noodled Sweet Potato
2 tbsp almond flour
1 tsp garlic powder
1 tbsp avocado oil
1 avocado, sliced or cubed
sea salt / black pepper / red pepper flakes – season to taste
optional: drizzle of a hot sauce or condiment of your choice
- In a large bowl, add Cece’s noodled sweet potato, eggs, almond flour, and garlic powder and stir to combine.
- In a large skillet, heat avocado oil over medium low heat. Add noodled sweet potato mix, forming into fritters with as you arrange in the pan.
- Cook on each side for 3-4 minutes, until fritters hold together and are browned. Meanwhile, add avocado to a small bowl and mash with the back of a spoon.
- To serve, add a spoonful of avocado atop each fritter. Season with salt, pepper and red pepper flakes to taste. Drizzle with sauce (if desired) and enjoy!
