Keto Cheesy Broccoli Rice


  • 1 package Cece Veggie Co’s Riced Broccoli
  • 1 tbsp olive oil
  • 4 cup chicken broth (can sub for vegetable broth)
  • 1⁄2 cup broccoli florets
  • 1⁄2 cup sweet onion, chopped
  • 2 garlic cloves, minced
  • 1⁄3 cup Parmesan, grated (can sub for vegan parmesan from Follow Your Heart or Violife)
  • 2 tbsp butter (can sub for vegan butter from Earth Balance or Miyoko’s)
  • 1⁄2 tsp salt
  • 1⁄2 tsp pepper
  • Optional Topping: 1-2 tbsp parsley


  1. Heat a pan with 1 tbsp olive oil over medium heat. Add in onions, garlic cloves, and butter. Stir until fragrant.
  2. Add in broccoli florets. Let cook for 2-3 minutes until softened.
  3. Add in broccoli rice, broth, salt, and pepper. Let cook for 3-4 minutes.
  4. Remove from heat and place into a bowl.
  5. Top with parmesan and parsley. Enjoy!
