Keto Cheesy Broccoli Rice
Ingredients
1 package
Cece Veggie Co’s Riced Broccoli
1 tbsp olive oil
4 cup chicken broth (can sub for vegetable broth)
1⁄2 cup broccoli florets
1⁄2 cup sweet onion, chopped
2 garlic cloves, minced
1⁄3 cup Parmesan, grated (can sub for vegan parmesan from Follow Your Heart or Violife)
2 tbsp butter (can sub for vegan butter from Earth Balance or Miyoko’s)
1⁄2 tsp salt
1⁄2 tsp pepper
Optional Topping: 1-2 tbsp parsley
Directions
Heat a pan with 1 tbsp olive oil over medium heat. Add in onions, garlic cloves, and butter. Stir until fragrant.
Add in broccoli florets. Let cook for 2-3 minutes until softened.
Add in broccoli rice, broth, salt, and pepper. Let cook for 3-4 minutes.
Remove from heat and place into a bowl.
Top with parmesan and parsley. Enjoy!
