1 pack of Cece’s® Veggie Co. Riced Organic Cauliflower
1 Tbsp + 1/4 cup olive oil
1/4 cup hummus
2 tsp lemon juice
1/8 tsp salt
1/8 tsp pepper
1 can chickpeas, drained
2 avocados, chopped
1/2 English cucumber, sliced
8 radishes, sliced
1/2 red bell pepper, sliced
1/2 cup purple cabbage, thinly sliced

How To:

  1. Warm skillet over medium heat with 1 Tbsp of the olive oil. Once heated, add Cece’s Veggie Co. organic riced cauliflower, stir, cover and reduce heat to low.
  2. Cook until soft, stirring occasionally, about 6-8 minutes. Remove from heat.
  3. In a small bowl, whisk together hummus, remaining olive oil, lemon juice, salt and pepper until smooth.
  4. Divide cauliflower among 4 deep bowls. Top with chickpeas, avocado, cucumber, radishes, red bell pepper, and purple cabbage.
  5. Top each bowl with the hummus dressing and enjoy!
