WHOLE30 SPICY SHAKSHUKA WITH ZUCCHINI NOODLES

  1. Preheat oven to 375F.
  2. In a large saucepan over medium heat, add oil. Add chopped onions and garlic until fragrant. Add red peppers, zucchini noodles, paprika, chilli powder, cumin and salt together. Let cook for 2-3 minutes.
  3. Add tomatoes, hot sauce and vegetable broth. Let cook for another 2 minutes. Remove from heat and transfer into a skillet.
  4. Crack the 2 eggs and place on top of the skillet. Place in oven and let bake for 8-10 minutes until eggs are cooked.
  5. Remove from oven, let cook and top with cilantro. Enjoy!
