Spiralized Beet Salad with Arugula & Goat Cheese

Cece's Veggie Co. Organic Spiralized Beet Salad with Arugula & Goat Cheese

Ingredients:

For the salad
1 package Cece’s Veggie Co. Organic Noodled Beets
6 cups baby arugula
1/2 cup walnuts, roughly chopped
4 oz goat cheese, crumbled
1 large avocado, chopped

For the dressing
1/2 cup olive oil
1/4 cup balsamic vinegar
1 Tbsp maple syrup
2 tsp Dijon mustard
salt & pepper

How To:

  1.  In a large bowl, add Cece’s Veggie Co. Organic Noodled Beets, arugula, and walnuts, tossing to combine.
  2. In a small bowl, add all dressing ingredients and whisk until combined. Taste and adjust salt & pepper as needed.
  3. Add dressing to beet / arugula mix and toss until well coated. Add goat cheese and avocado to bowl and toss gently to avoid mashing the soft ingredients.
  4. Divide into bowls and serve immediately. Enjoy!
