For the salad
1 package Cece’s Veggie Co. Organic Noodled Beets
6 cups baby arugula
1/2 cup walnuts, roughly chopped
4 oz goat cheese, crumbled
1 large avocado, chopped
For the dressing
1/2 cup olive oil
1/4 cup balsamic vinegar
1 Tbsp maple syrup
2 tsp Dijon mustard
salt & pepper
- In a large bowl, add Cece’s Veggie Co. Organic Noodled Beets, arugula, and walnuts, tossing to combine.
- In a small bowl, add all dressing ingredients and whisk until combined. Taste and adjust salt & pepper as needed.
- Add dressing to beet / arugula mix and toss until well coated. Add goat cheese and avocado to bowl and toss gently to avoid mashing the soft ingredients.
- Divide into bowls and serve immediately. Enjoy!
