SWEET POTATO SPIRALS WITH FRESH PESTO

INGREDIENTS:
2 garlic cloves
1/4 c pine nuts
2/3 c extra virgin olive oil

Combine the basil, garlic, and pine nuts in a food processor and pulse until you have a coarse texture. Slowly add ½ cup of the oil and process until fully incorporated and smooth. Season with salt and pepper to taste, combine with sautéed  Cece’s® Veggie Co. Sweet Potato Noodles and cheese, top with remaining oil and enjoy!
