Thai-Style Riced Cauliflower with Shrimp & Veggies

Cece's Veggie Co. Thai-Style Organic Riced Cauliflower with Shrimp & Veggies


1 package Cece’s Veggie Co. Organic Riced Cauliflower
2 Tbsp avocado oil
6 jumbo wild shrimp
seafood seasoning of choice (chili lime works well!)
2 cups broccoli florets
1/2 cup peas
optional for garnish: sesame seeds and sriracha

For Thai Peanut Sauce
2 Tbsp avocado oil
1/3 cup creamy peanut butter
2 Tbsp coconut amino or soy sauce
1/2 Tbsp red curry paste
1/2 cup vegetable stock
2 Tbsp water

How To:

  1. Start with prepping the sauce by heating 2 Tbsp avocado oil in a large pan or wok over medium heat. Add in peanut butter, curry paste, coconut aminos/soy sauce, vegetable stock and water and whisk well as it heats up.
  2. When the sauce is mixed well and heated through, add Cece’s Veggie Co. Organic Riced Cauliflower. Mix well, cover and let cook for 5 minutes.
  3. Meanwhile, prepare shrimp. Heat cast iron skillet over medium-high heat with remaining avocado oil. Add shrimp and seasoning of choice and cook for about 5 minutes on each side.
  4. Once riced cauliflower is tender, add broccoli and peas and mix well until coated in sauce. Cover and cook for another 5-10 minutes, until broccoli is tender.
  5. Divide veggie mixture into bowls to serve. Top with shrimp and garnish with sesame seeds and sriracha, if desired. Enjoy!
