1 pack of Cece’s® Veggie Co. Noodled Organic White Sweet Potatoes
10 Roma tomatoes, diced
2 Tbsp olive oil
1/4 cup fresh basil, chiffonaded
1 large onion, diced
4 large garlic cloves, minced
Parmesan cheese, for garnish (optional- skip if vegan or dairy-free)
- In a large saucepan over medium heat, add tomatoes and basil. Let simmer and reduce.
- In a separate skillet over medium-high heat, sauté onion and garlic in olive oil until onions are translucent.
- Add Cece’s organic white sweet potato spirals and continue to sauté, stirring often, for about 4-5 minutes.
- Add the veggie noodles and onion mixture to the tomatoes and toss to combine. Add salt and pepper to taste.
- Garnish with Parmesan cheese, if desired, and enjoy!
