INGREDIENTS:
6 cups vegetable broth
3 medium potatoes cut in 1/2” cubes
2 carrots, peeled and grated
1 small red onion, finely chopped
3 cloves garlic, minced
1/2 head red cabbage, shredded
14.5 oz can diced tomato
1/4 cup fresh lemon juice
1 tbsp fresh dill
1 tbsp sugar
sour cream (optional)
Add broth, carrots, and potatoes to a large pot, bring to a boil and cover, continue to boil for 15 minutes, then add onion, garlic, cabbage, and tomato, continue to boil for 5 more minutes. Turn soup down to a simmer, add Cece’s® Veggie Co. Beet Spirals and cook until noodles lose color. Add dill, sugar, salt, and pepper to taste, stir to dissolve sugar. Top with a dollop of sour cream and enjoy!
