1/2 pack of Cece’s® Veggie Co. Riced Organic Cauliflower
1/2 red onion, diced
1 cup Greek olives
1/2 cup parsley, chopped
1 tomato, diced
1/2 cup chickpeas
Juice of 1 lemon
Salt to taste
3 Tbsp Zubiates Dairy Free Crema (more if you want it to be spicier)
- In a medium-sized bowl, combine parsley, tomato, lemon juice and salt. Set aside.
- Place raw Cece’s Riced Cauliflower in serving dish of choice. (If you’d prefer a warm salad, sauté the riced cauliflower for 6-8 minutes first.)
- Add red onion, olives, chickpeas and the parsley / lemon / tomato mixture and stir to combine.
- Drizzle with Zubiates Dairy Free Crema and enjoy!
