ZUCCHINI NOODLE SESAME SALAD

Ingredients:

For salad:
1 pack of Cece’s® Veggie Co. Noodled Organic Zucchini
1 cup carrots, shredded
1/2 cup fresh basil, chopped
1/2 cup fresh cilantro, chopped
1/4 cup jalapeño, sliced
1 Tbsp sesame seeds

For dressing:
1/4 cup rice vinegar
2 Tbsp sesame oil
1 Tbsp tamari
1 Tbsp brown sugar (sub with coconut sugar if paleo)
1/4 tsp ground ginger
1/4 tsp minced garlic

How To:

  1. In a large salad bowl, add all salad ingredients (except sesame seeds) and toss to combine.
  2. In a separate mixing bowl, add all dressing ingredients and whisk until thoroughly combined.
  3. Add dressing slowly to salad and toss to coat. Top with sesame seeds and enjoy!
